Out of all the times I have had turkey in my life, there was one time I didn't dislike it because of how it was cooked. However, most of the time, it tastes like chicken with a little bit of dish soap thrown in. I can totally see your point here.

turkey thigh is great, especially if you can find it bone-in (very little labour needed and nicely cheap). makes a great curry.
every other cut actively makes a dish worse via its inclusion.

Turkey mince and beef stock is my go-to chilli filling after I was diagnosed with hypercholesteroloaemia. Tastes mostly like beef with better macros.
